Quick cooling ends any further development of the mushroom, while quickly reducing the internal temperature of the mushroom to ensure they remain firm, closed and healthy in appearance. As mushrooms are perishable, proper handling and care can significantly improve the holding quality of the product. Keep your mushrooms refrigerated. If the mushrooms were not purchased in a paper bag, remove the cellophane wrap and replace with a damp paper towel. Plastic bags should not be used as they lock in unwanted moisture, which is readily absorbed by the mushrooms. To keep your mushrooms looking pristine, do not stack other food items on top as they tend to bruise easily.

Prairie Mushrooms are grown in a safe, sterile environment using the highest quality production methods available. Two common myths are that mushrooms need to be peeled or washed. Peeling does nothing to enhance flavour, but it is a technique that enhances visual presentation when food art is the primary objec-tive. As mushrooms are very porous and absorb moisture easily, rinse and wash quickly.
